I like this definition from a web page.
Poutine is Acadian slang for "mushy mess" and is best described as a "heart attack in a bowl".

In Kansas I grew up with white gravy on french fries, but never cared for cheese fries -- so the concept of curds and a brown gravy is more than I can even imagine. And I'm worried that I might like them.
